Salata od leblebija sa dimljenom slaninom, sirom i još ukusnim sastojcima...



A party edition Chickpea salad!

Nekad sam jela leblebije samo u obliku supe ali sad uživam u njima u salatama!

Sastojci
  • šolja leblebija male veličine
  • nekoliko mini cherry paradajza iz grčkog ostrva Samos iseckane
  • stuk mladog luka sitno iseckan
  • pola glavica crnog luka sitno iseckana
  • malo sitno iseckanog svežeg peršuna
  • 1/2 žute babure paprike iseckana na kockice
  • 2 kriške dimljene slanine 
  • malo Gouda sira iseckan na kockice
  • sok 1/2 pomorandža
  • kašika maslinovog ulja
  • malo soli
  • malo bibera
  • nekoliko kapica senfa 
Leblebije treba da umočite u hladnoj vodi i da ih ostavite tamo poklopljene do sutradan kad ćete praviti salatu. Dakle, sutradan kuvati lablebije u šerpici u vodi bez soli sve dok ne omekšaju.
Ocediti i ostaviti da se ohlade. Dok se kuvaju spremiti dressing/sos. Mešati dobor sok pomorandža, maslinovo ulje, senf, posoliti i pobiberiti. Sipati smesu u teglici i ostaviti u frižideru da stoji. Kad se leblebije ohlade preliti ih sosom. Ostaviti ovako najmanje pola sata a kasnije ocediti ako treba, ne želimo da stane voda od sosa jer to nije dobro za sir.
U tiganju u maslinovom uljem dinstati kriške slanina, ovako čitave. Ostaviti da se ohlade. Zatim seći na komadice. Seći i sir na kockice. U posudu gde već imate leblebije dodati peršun, mladi luk i crni luk, papriku, paradajze a na kraju dodati slaninu i sir.

Chickpea Super Salad

Ingredients
  • 1 cup of small sized chickpeas
  • just a few mini cherry tomatos from the greek island Samos.
  • fresh green onion finely chopped
  • 1/2 onion finely chopped
  • just a little bit of minced fresh parsley
  • 1/2 yellow pepper cut into small cubes
  • 40gr smoked bacon (2 thin slices)
  • Gouda cheese cut in cubes
  • natural juice of 1/2 orange
  • a tablespoon of extra virgin olive oil
  • a pinch of salt & pepper
  • just a few drops of simple mustard

First of all the chickpeas have to be soaed in cold water and stay there overnight. The day after you have to cook the chickpeas in a small pan adding no salt until they are soft/cooked. Meanwhile make the dressing... squeeze 1/2 orange, add a tablespoon of extra virgin olive oil, salt and pepper and a few drops of simple flavor mustard. Stir well with a fork and let it cool in the fridge. 
We will need only the chickpeas for making the salad, not the water so use a sieve and keep the chickepeas!Let them cool. Then add the dressing and mix well. You may need to use the sieve again because propably the juice is more than you expected, it depends on the variety of oranges you used... but we do not want the cheese cubes to be soaked in the juice or in a big amount of dressing. Then add the onions, parsley, yellow pepper, tomatos... 
In a pan fry the bcon for a few minutes until it gets a nice color. Let it cool and then cut it into pieces. Cut the cheece in cubes also. Serve the bacon and cheese on the top of the alad, then mix and serve!
